This is the home recipe for the beer brewed by Big Time Brewery which went on to win gold at the GABF Pro-Am competition:

 

Beer Name:Barking Dog

Homebrewer: Jeff Niggemeyere

9 lbs. Pale Malt

½ lb. Crystal Malt (120L)

½ lb. Wheat Malt

4 oz. Smoked Malt

2 oz. Roasted Barley Malt

1.4 oz Fuggles hops 4.0% alpha (60 min)

¼ tsp. Irish Moss (15 min)

White Labs WLP005 British Ale Yeast

Boil Length: 80 minutes

Batch size: 5 Gallons

Single step infusion mash at 153F for 90 min, then mash out at 165F for 10 min.

Ferment at 63F and secondary for a couple weeks.
